With over 15 years of experience in Japanese and Thai cuisine, Chef Takeshi brings authentic techniques from Tokyo's Tsukiji Market and Bangkok's street food culture to Port St Lucie.
"Every dish I recommend comes from my heart. These are the flavors that remind me of home, perfected with ingredients I personally select each morning."
"Precision, passion, perfection"
Secret Family Recipe
My grandmother's recipe from northern Thailand. This coconut chicken soup uses galangal root that I import directly from Bangkok, combined with lemongrass grown in our herb garden.
Chef's Note:
"I prepare the galangal paste fresh each morning and let it infuse for exactly 4 hours. The coconut milk is from the first press only - no shortcuts in my kitchen."
A beautiful arrangement of the day's best sashimi over seasoned sushi rice. I personally select and slice each piece, arranging them like a painting on the bowl.
Chef's Note:
"I learned this presentation style in Kyoto. Each color and texture is placed to create harmony - not just delicious, but beautiful to look at. It's edible art."

Warming dishes perfect for cooler Florida evenings
"Pure fish flavors enhanced by premium junmai sake warmed to exactly 104°F. The warmth opens your palate to taste the subtle differences between each fish."
"My grandmother always said this pairing cleanses the palate between spoonfuls. The sweet tea balances the soup's galangal heat perfectly."
"This is how I eat sushi. Start with miso to prepare your taste buds, then let me surprise you with the day's best fish. Pickles refresh between pieces."
These special dishes aren't on the regular menu, but I'll make them for customers who ask by name
"Just tell your server you want one of Chef Takeshi's secret creations"
Spicy yellowtail inside, topped with salmon, mango, and microgreens. Named after Florida sunrises I watch every morning while selecting fish.
Exactly like the vendor outside my cousin's house in Bangkok. Extra-wide noodles, dark soy sauce, Chinese broccoli. My childhood on a plate.
Made exactly like the vendors at Tokyo's famous fish market. Fresh nori, perfect sushi rice, and the best tuna available today.
"Cooking isn't just my job - it's my way of sharing stories from my travels, my heritage, and my passion for perfect flavors. When you try one of my recommendations, you're tasting years of experience and care."
"Don't hesitate to ask me about any dish. I love talking about food almost as much as I love making it."
